I mentioned last week that I love candy; well I have a friend that might love candy more than me. When we were in High School we would play games to see if we could go without eating candy before 10am. I was happy to have the task of baking her birthday cake this year. For some reason it came to me, I am going to make a candy cake- genius idea I thought. Although, I told this to one of my sisters and she thought it sounded disgusting.
One of my favorite scenes of all time is in the movie Pollyanna, when they are at the carnival and there are all the beautiful layered cakes with globs of frosting. So I thought this candy cake would have to be layered, three layers of citrus yellow cake- each tier layered with candy. Happy Birthday Eliza!
So now I ask is this disgusting or brilliant?
Citrus Layered Yellow Cake
(serves about 30 people you really only need a bite!)
1 Cup of softened Butter
2 3/4 Cup of Sugar
3 Eggs
2 Teaspoons of Lemon Juice
2 Teaspoons of Lemon Zest
2 Teaspoons of Orange Zest
1 Teaspoon of Vanilla
3 1/2 Teaspoons of Baking Powder
2 Cups of Milk
4 Cups of Flour
Preheat Oven 350
Butter three 9 inch round cake pans
In a large mixing bowl mix together butter and sugar until fluffy and add the eggs in one at a time. When well combined mix in juice, zests, vanilla, and milk. Slowly mix in flour and baking powder. Separate batter evenly into each round and bake for 30-35 minutes or until a the tester comes out clean.
Butter Cream Frosting
2 Cups of Softened Butter
3 1/2 Cup of Powdered Sugar
2 Egg Whites (beaten to hold soft peaks)
1/3 Cup of Sweetened Condensed Milk
1/3 Cup of Milk
2 Teaspoons of Vanilla
2 Teaspoons of Lemon Juices
Beat together the butter and powdered sugar until fluffy. At this point mix in condensed milk, milk, vanilla, and lemon juice. Fold in egg whites at the end and now ready to frost the cake. Cover with desired candy.

So I’m planning a coed baby shower for the end of the month and have yet to come up with a decent favor that is appealing to both girls and boys. The logo for the shower is a cute baby stroller and the color is soft yellow…please help!

In regards to your question with an idea for a baby shower favor- the first thing that is coming to mind is cookies. I recently, helped throw a baby shower and I made cut out cookies in the letter A and B. The mother to be is having twins and she refers to them as baby A and baby B. Is there any kind of theme to your shower. Maybe a cookie cut out in that shape?
